Harvested a few beets for dinner last night. After being beat up by cold temperatures and lots of rain and overcoming getting eaten by rabbits, I finally sampled some delicious beets.
Preparation was simple. Wrapped them in foil with a little oil and roasted at 400 degrees for about an hour. Pulled them out, removed the skin, hit them with salt and pepper and called it a day. Delicious.
